Refined by China's ruling dynasties over centuries, the Imperial Court Cuisine is a kaleidoscope of Chinese culinary arts, a celebration of its diversity, splendour and profundity.

Hundreds of chefs were needed in the palace kitchens to provide for the Suns of Heaven.

They were brought to the Forbidden City by decree from all corners of the Empire for one purpose alone: to add each a single dish - their specialty of wide renown - to the Courts lavish banquets and festivals.

As a result, the Capital Imperial Court Cuisine provides an incredible range of Chinese cooking, most of it not previously experienced in the West. And given the employers status, of the highest possible quality.
